Ingredients:
- 1 pound(s) Yukon gold potatoes, cut into 1-inch pieces
- 1 red pepper, cut into 1-inch pieces
- 2 tablespoon(s) olive oil
- 2 teaspoon(s) olive oil
- 1 tablespoon(s) smoked paprika
- 1 teaspoon(s) smoked paprika
- Kosher salt and pepper
- 1 (1 1/2-pound) flank steak, trimmed
- 1/3 cup(s) mayonnaise
- 1 tablespoon(s) lemon juice
- 1/2 teaspoon(s) Dijon mustard
- 4 scallions, sliced
Method:
- Heat the oven to 425 oF. Toss the potatoes and red pepper onto a large pan. Add 2 tablespoons of oil, a tablespoon of paprika, and ½ teaspoon each of both salt and pepper.
- Heat the remaining oil in a large skillet. Season the flank steak with ½ teaspoon each of both salt and pepper.
- Whip the mayonnaise, lemon juice, mustard, and remaining 1 teaspoon of paprika in a small bowl.
