The key to a good dish is achieving the proper balance of salt and acid. You need to use some salt to activate the flavor, but you never want to use so much that food tastes salty. For instance, when you add just a tiny pinch of salt to a plain sliced tomato, the flavor comes alive. Acid (such as lemon or lime juice, or balsamic vinegar) is used to brighten the flavor.
