#9 – Mediterranean Breakfast Pitas
The Mediterranean Diet is highly recommended as a healthy, low fat, quality diet. So, why not using it for breakfast? Here is a yummy idea. Just chop a sweet red pepper, a small onion, a small tomato, whisk one or two eggs; mince 3-4 leafs of basil and tear a handful of fresh baby spinach leafs into small pieces. Heat a little high quality olive oil in a small skillet and stir the pepper and the onion for a couple of minutes. Add the whisked eggs, some salt and pepper and cook and stir until it sets. In a bowl, combine the tomato, the basil and the spinach and spoon this mixture onto two whole pita breads. Top with the egg mixture and sprinkle with some crumbled feta cheese and a little high quality olive oil. Now that is a great way to start your day!
