#8 – Vegetable Omelet Muffins
Eggs; they are as versatile as it gets! We suggest a healthy variation: omelet muffin with vegetables! It’s a practical, flavourful, easy and quick dish to make, perfect for breakfast and low in calories. To make 6 muffins you will need:
- 4-5 eggs
- ½ diced onion
- ½ cup diced ham or turkey
- ½ tablespoon olive oil
- ½ cup diced peppers (use different colours to make the dish more colourful)
- ½ cup grated cheese
- 10-12 crumbled crackers
Line your muffin tin with liners. Pour olive oil in a saucepan and fry the onions, the ham and the peppers. With a spoon, add filling into each muffin liner, but save some filling for later. Add most cheese, but also save some. Whisk together the eggs and add the crumbs. Fill the muffin liners with the mixture and top with the remaining filling and cheese. Bake them for 30 min. at 175° C. You can improvise and use whatever filling you crave for!
